Authentic Paella is originated in the late nineteenth century. There is still much controversy about the original
recipe. This recipe was made with large white beans, tomatoes, green beans dishes, chicken, rabbit, salt, oil, rice, water and saffron.
Whoever traveled to Spain has tried Paella Valenciana , but very few know how to do the real recipe.
1- To make a paella do not use basmati rice neither fragrant rice and neither long rice. We have to use either
bomba rice or the extra round rice. The round rice has the capacity to absorb the broth that will give it all the natural flavor. Among the most common mistakes is to believe that we must fry the rice with the ingredients at the same time.
2-If you go to a restaurant and you find peas in your paella is sure that you do not eat real paella. A paella expert will tell you that to present this dish with peas is a bad idea and it is unsightly.
3-The Chorizo is an Iberian product, but it is certainly not an ingredient for paella - The chorizo is a tapa or entry but never an ingredient in the elaborations of paella.
4- Another mistake is to put more ingredients (meat or seafood) than rice, it must have enough space to cook in your stove, it must be balanced without wanting to make too much.
5- We do not put turmeric but either saffron or food coloring.
6- We do not put onions in a paella
7- We do not make a fish paella with salmon
